Japan Food Greatest Taste (in the name of sushi)


Speaking of Japan, it is certainly inseparable from their culture which is somewhat unique. Besides this unique fashion, Japan is a country that is very disciplined in its life. Aside from its life and culture, there is one more thing that cannot be separated from Japan, namely its culinary. And one of the culinary that is familiar with Japan is Sushi.

Almost everyone would know about this one food. You could say sushi is a culinary icon originating from Japan. Every time when asked about culinary related to Japan, almost everyone answers it with Sushi, a food that is usually served with raw fish meat.

Sushi is a typical Japanese food consisting of rice formed with side dishes in the form of seafood, meat, raw or cooked vegetables. Sushi rice has a soft sour taste because it is seasoned with a mixture of rice vinegar (mizkan), salt, and sugar.

It is said that the habit of preserving fish using rice and vinegar comes from mountainous areas in Southeast Asia. The scientific basis behind the fermentation process of fish packaged in rice is because vinegar produced from rice fermentation breaks down amino acids in fish meat. The result is one of five healthy basic tastes.

The origin of the word sushi is an adjective for sour taste written with sushi kanji. In the beginning, sushi written in kanji was a term for a type of fish preservation called gyoshō which covered fish with table salt, yeast powder or sake dregs. Writing sushi using kanji letters that began in the mid-Edo period is a method of writing ateji (writing with other kanji letters that read the same).
